Dr. C. Michael Hawn sheds light on the origin and use of Sing We Now of Christmas in his online "History of Hymns" for the United Methodist Church:
The crecheis a common focal point for the Christmas season in France.
They (carols) are often sung around the creche in homes or in procession to the church. Rather than viewing the scene, it seems that the singer actually joins the biblical characters as a part of the scene. Rather than the focus on the Christmas tree with a manger scene placed in some adjacent location, the focus is on the creche itself and those persons that make up the nativity ensemble. This idea is an outgrowth of the French Renaissance when humanity assumed an important role in cosmic events.
Congregational songs were not sung in Catholic liturgy at this time. These were songs of the people. Even so, they did not lack theology or symbolic sophistication. NOEL NOUVELET, literally "Christmas comes anew," is a tune that dates to the late fifteenth century.

About Deck the Halls:
According to Wikipedia (July 2023) Deck the Halls dates back to 1862 and may be found in Volume 2 of Welsh Melodies, authored by John Thomas (1826-1913). Welsh text here is by John Jones and English text by Thomas Oliphant, a Scottish musician. Not surprisingly, the 1862 English text centered around drinking, with phrases like:
Fill the meadcup, drain the barrel, (Don we now our gay apparel)See the flowing bowl before us, (See the blazing yule before us)Laughing quaffing all together, (Sing we joyous all together)
Lyrics in this arrangement appear in the December 1877 issue of the Pennsylvania School Journal which no longer includes references to drinking.
About this Arrangement:
A duet version of this brief, delightful and fun-to-sing arrangement is the basis for this SATB arrangement. My wife and I have been singing the duet version as long as we can remember (and that's well over 50 years!) So, when our caroling quartet needed a rousing piece to use, the solution was clear.

Deck the Halls

Originally written for a wedding in 1998, Faith, Hope, Love orchestration added here has greatly enhanced this choral version. The unusual instrumentation was made for the resources available. Parts provided are, Piano, Flute, Alto Sax, Horn in F (doubled by Alto Sax), Drum set, Violin &amp; Double Bass.
