Claudin de Sermisy was best known as a composer of Parisian songs, which were written in a homophonic manner on a love text in the tradition of courtly love. This selection alternates couplets (the story itself) with the obstinate sentence of the refrain (I do not eat pork), while the music itself adds to the charm and impertinence of the lyrics.
